Braised Green Beans

Braised green beans are a side dish from the simplest and most homely Tuscan tradition: tender green beans slowly cooked with a fragrant soffritto of fresh herbs, pancetta and garlic, striking a perfect balance between rustic flavour and wholesome goodness. A dish that pairs beautifully with meat mains or can be enjoyed on its own with a good slice of Tuscan bread.

Ingredients

  • Green beans
  • Pancetta
  • Garlic
  • Sage
  • Parsley
  • Basil
  • Extra virgin olive oil
  • Butter
  • Salt

Preparation

Finely chop 2 sage leaves, parsley and 1 basil leaf. Add the diced pancetta and a clove of garlic to the mixture.

Transfer everything to a pan with a drizzle of olive oil, a knob of butter and a pinch of salt. Sauté gently over low heat. Add the green beans to the pan along with a splash of water. Cover with a lid and cook until the beans are tender.
