In a pan (preferably earthenware), heat the butter with the extra virgin olive oil and add the chopped onion. Saut\u00e9 gently for about 5-8 minutes, until golden and translucent.<a href=\"https:\/\/www.ciaotoscana.it\/cucina-toscana\/crostini-di-fegatini-toscani-la-ricetta-originale\/\" target=\"_blank\" rel=\"noreferrer noopener\"><\/a><\/p>\n\n\n\n<div style=\"height:5px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong><em>Cook the livers<\/em><\/strong><br>Add the chicken livers to the pan along with the sage leaves and brown over high heat for 5 minutes, stirring often. Deglaze with Vin Santo and let the alcohol evaporate for 2-3 minutes. Lower the heat, cover the pan and add the stock gradually, cooking for about 15 minutes. The mixture should remain slightly moist.<a href=\"https:\/\/www.sicilianicreativiincucina.it\/crostini-neri-toscani-pate-fegatini\/\" target=\"_blank\" rel=\"noreferrer noopener\"><\/a><\/p>\n\n\n\n<div style=\"height:5px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p><strong><em>Add capers and anchovies<\/em><\/strong><br>Rinse the capers under running water to remove the vinegar. Clean the anchovies in oil. Add them to the pan with the cooked livers and mix well.
